Santa’s Hat Cocktail

Today before we share with you this wonderful holiday cocktail, we need to talk about egg whites. Bartenders have been using egg whites in one way or another over the past few centuries to create a frothy head on their creations.  This practice has gone to the wayside as people became squeamish about raw egg products, though today it is easy to find pasteurized egg whites at the grocery store that provide a high level of safety.  Should you be vegan there are options such as powdered Lecithin derived from soy and Aquafaba (chickpea water) though we find egg to be the most neutral in flavor and best in foaming.  In researching the Santa’s Hat Cocktail we found numerous variations and chose to draw a bit from this recipe and a bit from that, to assemble our own rendition.  It is mildly sweet, pleasantly tart with just a touch of bitter amaro character.  The rich red cocktail is crowned with a lovely white froth, and a sprig of aromatic rosemary for garnish.  The Santa’s Hat Cocktail is a beautiful drink that is the perfect ice breaker for this year’s holiday gatherings.  Cheers! 

Santa's Hat Cocktail

In a cocktail shaker (with no ice) dry shake the following:
  • 1 Ounce Well-Bred Vodka
  • ½ Ounce Cherry Heering Liqueur
  • ½ Ounce Campari
  • ½ Ounce Fresh Squeezed Lemon Juice
  • ½ Ounce Pasteurized Egg White/or Substitute

Dry shake vigorously for 60 seconds.  Add ice and shake further till the drink is painfully cold and frothy.  Strain into a chilled cocktail saucer.  Garnish with a long spring of fresh rosemary.
