It is fall and the other day we cracked open a bottle of home-made sparkling dry cider and decided to embellish on it a bit to create a cocktail in the fashion of the Stone Fence of Green Mountain Boys fame (1775) . Our riff on this classic colonial cocktail uses Rye instead of Apple Jack as the spirit and adds a bit of honey to balance the dryness of the cider. The Rye spice complements the apple flavors, and the honey rounds the tart edges in this Stone Fence variation we call Stone Mill Cocktail. Key to the drink’s success is using a bone-dry sparkling cider. We used our own but suggest Stowe’s High & Dry Cider as a good option. The Stone Mill Cocktail is a great three ingredient highball perfect for the fall season.
Stone Mill Cocktail In a tall Collins glass filled with cracked ice add:
Top with Dry Sparkling Hard Cider. Garnish with an apple slice and a tall straw. Stir, Enjoy!
*Honey Simple Syrup In a small saucepan on low heat add:
Heat slowly stirring constantly until honey and water are combined and the honey is thinned. Remove from heat and cool. (Keeps in the refrigerator for 5-7 days). Also great for iced tea or anything you want sweetened! |
