Sometimes simplicity is best. The combination of two easy ingredients that transform each other into something exceptional, something special. The Carajillo is that kind of simplicity in a glass! Made with nothing more than chilled espresso and Licor “43” it is a coffee cocktail lover’s dream. Cuarenta Y Tres Liqueur also known as Licor 43 is a sweet cordial comprised of “43” ingredients offering flavors of vanilla and citrus with various herbal accents. We offer you this Mexican cocktail as a two ingredient, low alcohol sipper, good for brunch, lunch or when served up with decaf as the perfect night cap. We have seen variations on the original recipe with the addition of vodka but find it less appealing as a strong drink than when made in its true form. The original recipe calls for a 50/50 split of the ingredients though you may wish to tinker with the measures a bit to adjust the sweetness level to your taste. We like the Carajillo shaken vigorously (so it forms a nice white head in the glass) and served up in a Nick & Nora cocktail glass, though it is equally enjoyable over ice. Carajillo In a shaker glass filled with ice add:
Shake till painfully cold, then shake some more. Strain into a stemmed cocktail glass. The drink requires no garnish though we have seen coffee beans (3) floated on top.
